この記事では、「蕎麦の収穫方法」について、解説します。

その前に、「蕎麦の育て方」の簡単な手順です。
- STEP1種は「ばらまき」もしくは「すじまき」種はばらまきもしくは、列の間隔を50cmほどとってすじまきにする。
- STEP2軽く土を被せるタネは、１cmくらいの深さでうえ、土を軽く被せます。
- STEP3軽く足で踏む種を蒔いたら軽く足で踏みます。
- STEP4水やりをするたっぷりと水をやる
- STEP5間引く本葉が触れ合わないよう、適度に間引きます。
- STEP6土を被せる花が咲いたら、根元に土をやせて倒れないします。

それでは、蕎麦の収穫方法を紹介します。
1.蕎麦（そば）の収穫時期
蕎麦の収穫は、種を蒔いてから役２ヶ月半〜３ヶ月でできます。
また、春まきと秋まきがあります。
春まきは、４月上旬〜６月下旬が適しており、
秋まきは、７～８月頃が適しています。
季節に合った品種を選ぶと失敗が少なくなります。
2.手作業で蕎麦（そば）を収穫方法・乾燥方法
一番上の花の実が、70〜80％黒くなったら根元から切って収穫します。
収穫が遅れたり、気温が上がってしまうと実が落ちてしまいます。
なので、早朝や曇りもしくは雨が降った翌日に収穫するのがベストです。
収穫後は、雨に当たらないような場所で逆さに吊るし天日干しにし、15～30日ほどかけ乾燥させます。
乾燥後は、ビニールシートなどを敷き、棒などで軽くたたいて身を落とします。
具体的な手順を９つの「ステップ」で紹介します。
- STEP1収穫は、蕎麦（そば）の実が茶色７０〜８０％の黒雨もしくは曇りの日の翌日がベスト！理由は、実が落ちにくい
- STEP2根本から狩るもしくは、引き抜くそばをカマで根本から刈り取るもしくは根本から生き抜き根元の泥をかまで叩いて落とします。
- STEP3刈り取ったら、そばを天日干しするために藁で縛る天日干しをするために根本を藁を束ね絞るといいです。
- STEP4通常は30日ほど昼夜干す通常は30日ほどかけ干したままにします。屋内で雨天を避けれる場合は、３週間程度でも問題ありません。
- STEP5そばが乾燥したら、茎から実を取る干して乾燥したら、蕎麦の実を茎から取ります。
- STEP6ふるいにかけ、葉や茎、土などを取り除くふるいにかけて、蕎麦の実以外を取り除きます。もし取り除けない場合は、唐箕（とうみ）という道具を使って取り除くといいです。それ以上は、手作業で取り除きます。

- STEP8玄そばができたら、さらに天日干し玄そばでも十分美味しいそばが出来上がりますが、一般的にはさらに５日間くらい天日干しします。理由は日持ちがするからです。
- STEP9天日干し蕎麦の完成これで、天日干し蕎麦の完成
3.蕎麦の収穫量「10a当たり67kg」
全国の調査では、10a当たり収量は67kg（670人前/100g）が、農林水産省にてわかっています。
ただ、一般的な農家ですので、手作業でやるとどれくらいできるか計算してみます。
ちなみに使っている面積は1aくらいです。
3ヶ月後にはわかりますので、お楽しみに。
